I used a EWP water pump for the same setup in a BMW track race car. Worked very well. Switched the water pump and fan on/off from the ecu optional fan output. On at 85 off at 80.
Use no thermostat or stock water pump if u use a temp. controller to switch on/off.

how does an electric pump compare to stock pump? would the stock water pump not interfere with the electric pumps flow?

U need to take the stock pump impeller out. Only use the pump housing. Get the Davies Craig EWP from Universal coolers in Pretoria. U can use their controller, or ecu temp output.
